Below you can find a few delicious Mother’s Day recipes.

1. Mother’s Day cake recipe: Choco Cake
Ingredients needed:
2 c Flour; Unbleached, Sieved
3 ea Eggs large and Separated
1/2 c Cocoa; Baking
2 1/4 ts Baking Soda
3/4 c Shortening; Vegetable
1 1/2 c Corn Syrup; Dark
1 1/2 ts Vanilla Extract
1 c Coffee; Cooled
1/3 c Sugar
3/4 ts Salt

How to cook
1. Preheat the oven to 350 degrees F.
2. Sift together the flour, cocoa, baking soda and salt and then set aside.
3. Then cream together the shortening and sugar in a mixing bowl until it becomes light and feathery. Mix together the corn syrup and egg yolks. Beat in vanilla.
4. Add dry ingredients alternately with coffee to creamed mixture, beating well after each addition.
5. Now beat egg whites in another bowl until stiff peaks form; fold egg whites into cake batter.
6. Put batter into a greased 15x10x 2-inch baking pot.
7. Bake for about 45 minutes. Cool in pan on rack.

2. Mother’s Day Breakfast recipe: Fluffy French Toast
Ingredients needed:
1/4 cup all-purpose flour
1 cup milk
1 pinch salt
3 eggs
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon white sugar
12 thick slices bread

How to cook:
1. Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
2. Heat a lightly oiled griddle or frying pan over medium heat.
3. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

3. Mother’s Day Brunch recipe: Bacon Quiche Tarts
Ingredients needed:
5 slices of bacon
1 package cream cheese, softened
2 tablespoons milk
2 eggs
1/2 cup shredded Swiss cheese
2 tablespoons chopped green onion
1 can refrigerated flaky biscuit dough

How to cook:
1. Preheat oven to 375 degrees F. Lightly grease 10 muffin cups.
2. Place bacon in a large, deep skillet. Cook over medium high heat until crisp and evenly brown. Drain, crumble, and set aside.
3. Place the cream cheese, milk, and eggs in a medium bowl, and beat until smooth with an electric mixer set on Low. Stir in Swiss cheese and green onion, and set aside.
4. Separate dough into 10 biscuits. Press into the bottom and sides of each muffin cup, forming 1/4 inch rims. Sprinkle half of the bacon into the bottoms of the dough-lined muffin cups. Spoon about 2 tablespoons of the cream cheese mixture into each cup.
5. Bake 20 to 25 minutes in the preheated oven, until filling is set and rims of the tarts are golden brown. Sprinkle with the remaining bacon, and lightly press into the filling. Remove from pan, and serve warm.

4. Mother’s Day Lunch recipe: Crispy Chicken Fingers
Ingredients needed:
2 pounds skinless, boneless chicken breast halves
2 eggs
6 tablespoons buttermilk
1-1/2 cups dried bread crumbs
1/3 cup grated Parmesan cheese
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1-1/2 teaspoons dried dill weed
1/3 cup melted butter

How to cook:
1. Preheat oven to 400 degrees F.
2. Remove all fat from chicken breasts and cut into 1 inch by 4 inch strips. In a bowl, whisk together the eggs and buttermilk. In a plastic resealable bag mix together the bread crumbs, grated cheese, garlic powder, salt, pepper and dill weed.
3. Dip each chicken strips into buttermilk mixture, then into bread crumb mixture (about 4 strips at a time), and toss to coat well. Place strips in a single layer in a 9×13 inch baking dish and drizzle with melted butter. Bake in the preheated oven for 15-20 minutes or until golden brown, turning once after about 7-8 minutes of baking time. Serve with Chinese sweet and sour sauce.

5. Mother’s Day Dinner Recipe: Lemon Chicken
Ingredients needed:
4 Boneless skinless chicken thighs or breast (thawed)
2 cloves of Garlic
2 tablespoons of Fresh rosemary (1 tablespoon dried)
2 tablespoons of butter
1 tablespoon of Olive oil
2/3 cup of Lemon juice
Pepper to taste
Salt to taste

How to cook:
1.Take a heavy frying pan and mix margarine and oil together; heat over medium-high heat until margarine melts.
2.Stir fry garlic and rosemary in the oil/butter mixture for 2 minutes and then add lemon juice and bring the mixture to a boil.
3.Add chicken and fry until it becomes brown on all sides.
4.Add salt and pepper to taste.
5.Decrease heat to low, cover, and cook for 20 – 30 minutes or until chicken is fully cooked.
